Low Carb Cauli-Flied "Rice" with Lemon

Cauli-Flied "Rice" with Lemon
[ makes 6 servings - 4.3 grams net carbohydrates per serving]

2 lbs. (908g)
trimmed cauliflower

Grate the cauliflower using the medium sized holes of a grater or grater attachment of the food processor. Grate the core too. With your hands squeeze out as much water as you can. This may not be necessary for some cauliflower as they vary in degree of wetness.

4 Tbsp. (60 mL)
unsalted butter

2 cloves garlic, minced

1 tsp. (5 mL) salt

Over medium heat, melt the butter in a large, heavy frying pan and add the garlic. Sauté until the garlic sizzles. Add the grated cauliflower, sprinkle with salt and stir and fry until it’s tender-crisp, about 5-8 minutes. The length of time will depend on the cauliflower.

2 green onions, thinly sliced
1 tsp. grated lemon rind
1/2 tsp. dried oregano
freshly ground black pepper

Stir in the green onion, lemon, oregano and pepper. Check the seasoning and serve.
