Marsala Spice Mix

Marsala Spice Mix

1 tsp each of
Ground Ginger, Cumin, Caraway, Coriander, Mustard Seeds, Cayenne, Black and White Peppercorns.

1 whole clove garlic

1 tsp ground Cinnamon,
Garam Marsala and Salt

2 tsp Turmeric

Sprig curry leaves

Combine all the ingredients for the marsala spice mix. Dry roast 2 tablespoons briefly.

When cool grind in coffee grinder.
3ea Shallots
1 garlic clove
2 tomatoes
2 tsp butter

Thinly slice the shallots. Mince garlic and chop the tomatoes.
Heat a little butter in a pan and sweat the shallots, garlic, tomatoes and half the spices. Sauté slowly till the onions are soft.

1 ½ cups Lamb braising stock
¾ cup Cream
1 Lime
Salt and Pepper
1 tbls Cilantro

Add stock and reduce by 2/3.

Add spices and cream. Cook for 15 minutes over low heat. Pass through fine sieve.

Squeeze juice from one lime and add to sauce.

Chop cilantro and add to above sauce.
