1 tsp each of
Ground Ginger, Cumin, Caraway, Coriander, Mustard Seeds, Cayenne, Black and White Peppercorns.
1 whole clove garlic
1 tsp ground Cinnamon, Garam Marsala and Salt
2 tsp Turmeric
Sprig curry leaves |
Combine all the ingredients for the marsala spice mix. Dry roast 2 tablespoons briefly.
When cool grind in coffee grinder. |

3ea Shallots
1 garlic clove
2 tomatoes
2 tsp butter

Thinly slice the shallots. Mince garlic and chop the tomatoes.
Heat a little butter in a pan and sweat the shallots, garlic, tomatoes and half the spices. Sauté slowly till the onions are soft. |
