Thai Papaya Salad (Som Tum)

Thai Papaya Salad (Som Tum)
[ serves four ]

3 cups Shredded green papaya

½ cup Carrot, julienne

1 tsp. Shrimp and chili flakes (bottled)

1 cup Thai Vinaigrette* (see recipe below)

¼ cup Toasted peanuts

2 Tomatoes, wedged

Mint

Cilantro

Combine all ingredients in a mortar and pestle.

Macerate all ingredients to bruise papaya and crush peanuts

Serve immediately, slightly chilled.

 

Thai Vinaigrette

2 cups Sugar

1 cups Water

¼ cup fresh lime juice

¼ cup fish sauce

1 Tbs. chopped garlic

1 Tbs chopped cilantro

2 Chopped Thai Chilies

1 Tbs Chopped shallots

Dissolve sugar in water over heat, cool fully before proceeding.

Combine all ingredients in a stainless steel bowl.

Thai red chili peppers must be chopped fine. Eliminate seeds to reduce heat.
